Wow the days seem to be just whizzing by, not long to go to get everything organised for Christmas!
♥As a mum with a full time job (like so many mums) I am often asked about getting through Christmas and how to manage it. And as much as I would love a magic wand to get everything done in time, the best thing I can say, is also probably the most frustrating things to say – especially when the phones ringing, you have to pick up a child and drop one off, manage the homework, your own work AND on top of that organise Christmas. But when I say being prepared and as organised as possible can really make a difference, particularly when it comes to feeding your family; I really mean it.
♥By coming up with meals three or four days in advance, doubling the amount you would normally make, as well as writing a list of ingredients needed, means that you have enough to freeze an extra portion for post-Christmas meals (when I certainly do not have the energy nor inclination to be making food all the time). Not only does it save you time, but batch cooking and making a shopping list, and sticking to it, is also a great way of keeping to a budget which definitely helps over these few months.
♥Here are some great quick and easy recipes I use for family meals in the lead up to Christmas that can be cooked in large quantities and frozen or whipped up for a quick meal that fills tummies.
♥Rudolph baked potato: baked potatoes are great family staple in my house, brilliant made with lots of different fillings your children can pick and choose.
♥Turkey Meatballs and Spaghetti is another great family dish. If you make the meatballs and sauce in advance, or even just the sauce, you can mix it up with different types of pasta. And for quick meals this Noodle Chicken is a great store cupboard basic.
♥Blackberry and Apple crumble this is a great quick dessert. I often make double the quantity of crumble topping and freeze it in a freezer bag to make a quick pudding whenever. If blackberries are not available, you can swap with peaches, plums or apple is delicious mixed with rhubarb.
