We know that we are well in to the Summer now and everybody is enjoying their barbeques, but let’s not forget about the most important meal of the day… breakfast!!!

A good breakfast should contain protein such as eggs, cheese or yoghurt, wholegrain cereal or bread and fruit. I like to have wholegrain cereal for my breakfast, like my delicious granola but I always remember to have vitamin c fruit drink with my cereal to help absorb the iron! I wanted to find out what people are having these days for breakfast after reading a recent article in The Grocer about cereal sales on the decline and I also appeared on Daybreak on Monday talking about the same issue. We posed the question to our Twitter Followers and Facebook Fans to discover what they had to start their day and it was fantastic to hear that many families are opting for alternatives to sugary refined cereals, from porridge oats and pancakes to fresh fruit and scrambled eggs on toast!

Go to School on an Egg

Eggs are very versatile. Soft-boiled eggs with toast soldiers are popular. Scrambled eggs are quick and easy, and you can add extras such as chopped tomato or grated cheese. You can even make a breakfast burrito by spooning some creamy scrambled egg down the centre of a wrap, adding a little salsa and grated cheese, and then rolling up.

Fruit Muesli

This Fruit Muesli makes a delicious and nutritious baby breakfast. It’s a good idea to keep some cubes of apple and pear puree in the freezer so that all you need to do is defrost it and mix it with the muesli in the morning.

The Breakfast Wrap

This quick breakfast idea is perfect for the school run. Pack a wet wipe to clean up sticky fingers!

Perfect Pancakes

Pancakes are a real treat for breakfast. Mix 55g/2oz of self raising flour, one tablespoon of caster sugar, a quarter teaspoon of bicarbonate of soda and pinch of salt in a medium bowl. Beat the egg and milk in a separate bowl, then add to the dry ingredients and mix until just combined. Leave the batter to stand for 5 minutes. Brush oil on the base of a frying pan and drop some batter into the pan. Cook for 2 minutes on each side. Serve with maple syrup and fresh berries.
